Spicy Peanut Sauce

This sauce, or dip, or whatever you want to call it is one of my absolute favorite recipes. Perfect as a dip for cold vegetables, tossed with hot noodles for a quick dinner, used as a marinade for chicken... I'd literally top ice cream with it, it's that good. It's also super easy, and ALWAYS a hit! I toss everything into a mini-blender and it takes two minutes, but it's also just as easy to stir together by hand.

RECIPE:
Spicy Peanut Sauce
adapted from The New Moosewood Cookbook by Mollie Katzen

INGREDIENTS:
1/2 cup peanut butter (the better the PB, the better the sauce)
1/2 cup water (if PB is thick, use warm water)
3 tablespoons soy sauce
2 tablespoons sugar
3-4 garlic cloves
2 teaspoons cider vinegar
2 tablespoons fresh cilantro, chopped
cayenne (I usually use about a 1/2 teaspoon, but add a little at a time until it tastes right)
salt, to taste (if PB is unsalted)

DIRECTIONS:
Place PB in a small bowl. Add warm water and stir with a spoon or small whisk until uniformly mixed. Stir in remaining ingredients and mix well. Cover and refrigerate.
