Chocolate Haystacks


My mother-in-law makes these "cookies" every year, and they are hands down one of my most favorite concoctions. Year after year, it amazes me how 3 ingredients, including chow mein noodles, can yield such crispy, chocolaty perfection. The recipe couldn't be easier: melt chocolate and butterscotch chips, stir in chow mein noodles, and make little "haystacks". That's it!! The butterscotch chips are sort of a secret ingredient - they take chocolate-covered-noodles to the next level.  If you are short on time and want a good crowd-pleaser, this is your recipe.


INGREDIENTS:
1 bag (12 ounces) chocolate chips (semi, bittersweet, dark...)
6 ounces butterscotch chips
1/2 bag chow mein noodles (about 3 cups)

DIRECTIONS:
Melt chocolate and butterscotch chips in a small saucepan over medium to medium-high heat, stirring almost constantly. Place chow mein noodles in a large bowl and pour in melted chocolate. Stir to thoroughly coat noodles in chocolate. If mixture seems like there's too much chocolate to chow-mein noodle, just add more noodles. Place little piles ("haystacks") of noodles onto cookie sheet lined with wax or parchment paper. Make any size you like, but piles about the size of a ping pong ball would be similar to an average cookie. Place in fridge for 10-15 minutes to harden chocolate. Store at room temperature for as long as they last, but I promise you... it won't be long!
